Lower-sugar, higher protein banana bread.

Recipe Ingredients for Banana Bread

50 g whey protein powder
1 1/2 cups flour
1/2 cups rolled oats
3/4 t baking soda
1/2 t salt
1/2 cup sugar
1/4 cup butter
1 large egg
2 egg whites
1 1/2 cups mashed banana
0.33 cup plain low-fat yogurt
1 t vanilla
1/2 cup pecans

Recipe Directions for Banana Bread

  1. Preheat oven to 350 degrees.

  2. In mixer, cream together butter & sugar. Add egg & egg whites, mixing thoroughly. Add vanilla, yogurt & mashed bananas. In a separate bowl, mix together flour, oats, flax seeds, protein powder, baking soda & salt. Add dry mixture to wet ingredients, being careful not to overmix. Add pecans to batter. Pour into a loaf pan sprayed with non-stick spray, sprinkle top with extra oats and pecans, if desired. Bake for 1 hour or until toothpick inserted into center of loaf comes out clean. Cool on baking rack. Makes 12-14 servings.
