Recipe Ingredients for Banana Bread

1 cup bananas, very ripe & mashed
6 tbs In the Raw Zero Calorie Sweetener
6 tbs Sugars, Granulated
1 3/4 cups all purpose flour
1/2 tsp baking soda
1 1/4 tsp baking powder
3 tbs Smart Balance butter
3 tbs applesauce, unsweetened
1/2 cup eggbeaters
2 tbs plain nonfat yogurt or buttermilk
1/3 cup chopped walnuts (optional)
1/3 cup craisins

Recipe Directions for Banana Bread

  1. Preheat the over to 350 degrees F. Spray a medium-sized loaf pan (7 1/2 "x 3 1/2 " x 2 1/2"). Or 4 mini loaf pans.

  2. Stir together dry ingredients in a bowl. Mash the bananas in a small bowl.

  3. In a mixer bowl beat shortening and applesauce adding the stevia and sugar and mix till smooth. Pour in egg & milk slowly and mix till smooth.

  4. Add flour mixture alternately with bananas mashed bananas.

  5. Mix in the walnuts and craisins just before the flour is completely blended.

  6. Place into the loaf pan. Bake for 50 minutes to 1 hour until a toothpick or fork stuck in the middle comes out clean. Turn out the loaf and cool on a rack.
