Makes 2 1/2 servings



2 pancakes per serving. Not exactly healthy, but a good incentive to start eating breakfast! This makes 5 pancakes for me. I make them and freeze the remaining, then pop one in the toaster for a fast breakfast later in the week.

Recipe Ingredients for Banana Bread Pancakes

2 tablespoons honey
1 tablespoon butter
2 egg whites
1/8 cup applesauce
1/2 cup mashed bananas
1/2 cup all purpose flour
1/4 cup whole wheat flour
1/4 teaspoon baking soda
1 dash salt
1 tablespoon butter
1 teaspoon honey
1 dash cinnamon
1 dash nutmeg
5 tablespoons pancake syrup

Recipe Directions for Banana Bread Pancakes

  1. Mix together the first 9 ingredients. In a nonstick pan set to medium low, cook pancakes.

  2. While pancakes are cooking, mix together the butter, honey, cinnamon, and nutmeg to make honey butter. Spread lightly on pancakes, saving any remaining for future use (great on toast!)

  3. Enjoy with small amounts of syrup.
