Makes 2 1/2 servings



2 pancakes per serving. Not exactly healthy, but a good incentive to start eating breakfast! You can lower the calories by choosing to not consume either the honey butter or the syrup. This makes 5 pancakes for me. I make them and freeze the remaining, then pop one in the toaster for a fast breakfast later in the week.

Recipe Ingredients for Banana Bread Pancakes with Pecans

1 dash vanilla
2 tablespoons honey
1 tablespoon cream cheese
2 egg whites
1/8 cup applesauce
1/2 cup mashed bananas
1/8 cup pecans
1/4 teaspoon baking soda
1 dash salt
1/2 cup all purpose flour
1/4 cup whole wheat flour
1 tablespoon butter
1 teaspoon honey
1 dash cinnamon
1 dash nutmeg
5 tablespoons pancake syrup

Recipe Directions for Banana Bread Pancakes with Pecans

  1. Whisk together the first 7 ingredients.

  2. Once well mixed, add the flours.

  3. Over medium heat, make 5 pancakes using a nonstick frying pan.

  4. While pancakes are cooking, mix together the butter, honey, cinnamon, and nutmeg to make honey butter. Spread lightly on pancakes, saving any remaining for future use (great on toast!)

  5. Enjoy with small amounts of syrup (I have factored this recipe for 1 Tablespoon of syrup per pancake.
