Banana Bread! This can actually make 3 small loaves, 2 large ones, or 3 trays of 12 muffins each.

Recipe Ingredients for Banana Bread (Muffins)

1 cup shortening
1 1/2 cups white sugar
1 1/2 cups brown sugar
6 bananas, ripe (mashed)
2 tbsp vanilla
4 eggs
3 1/2 cups flour
2 tsp baking soda
1/2 tsp salt
1/2 cup milk
1 tbsp lemon juice

Recipe Directions for Banana Bread (Muffins)

  1. Preheat oven to 350

  2. Cream shortening & sugars in bowl till fluffy

  3. Add bananas vanilla & eggs - mix till blended

  4. Add 1/2 of flour, soda, salt mixture then add milk/lemon juice mixture (you can also use buttermilk for this part) then add remaining flour.

  5. Grease & flour pan - 2 5x9 or 3 smaller

  6. bake 1 hr to 1 1/2 hrs or until you can stick in a toothpick and it comes out clean.

  7. Again! Can be muffins or bread - the serving size listed is for muffins.
