Yummy, moist banana bread, not too many ingrediants let the flavor of the bananas really show through.

Recipe Ingredients for Banana Bread Muffins

1 cup sugar
1 egg
4 tbsp melted butter
3 bananas
1 1/2 cups self rising flour
1 tsp baking soda

Recipe Directions for Banana Bread Muffins

  1. Mix the first three ingrediants in a bowl, be careful the butter is not too hot or it will cook the eggs. Add the bananas and mix well.

  2. Add the final two ingrediants and mix, but only until just moistened, don't over mix.

  3. Fill lined muffin cups with batter until each cup is about 2/3 full. Put into the oven 350 and bake for 20- 25 minutes.
