From the Joy of Cooking, Quick Banana Bread. Easy and quick to make. Very nice bread, moist but not gooey inside.

Recipe Ingredients for Banana Bread & Muffins

1 3/4 cups flour
2 1/4 tsp double-acting baking powder
1/2 tsp. salt
1/3 cup shortening
2/3 cup sugar
2 eggs
1 1/4 cups ripe banana pulp

Recipe Directions for Banana Bread & Muffins

  1. Preheat the oven to 350 degrees.

  2. Sift (stir) together the flour, baking powder, and salt.

  3. Cream the shortening and sugar together.

  4. Add the eggs and banana pulp to the sugar mixture.

  5. Add the flour mixture to the batter, in two or three parts. Mix until uniform.

  6. Add the nuts.

  7. Bake about one hour, or until done.

  8. Notes and Variations

  9. I omit the lemon rind.

  10. Two or three bananas, four if they're small, yield the right amount of mashed banana.
