Banana bread in a more convenient, portion sized serving.

Recipe Ingredients for Banana Bread Muffins

1 3/4 cup flour
3/4 cup sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 eggs, beaten
1/2 cup butter, melted
3 bananas, mashed
1 tsp vanilla extract

Recipe Directions for Banana Bread Muffins

  1. Preheat oven to 350 degrees.

  2. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.

  3. In a medium bowl, combine bananas, eggs, butter and vanilla.

  4. Fold the dry ingredients into the wet, mixing lightly. Do not incorporate too well or you will have tough, dense muffins.

  5. Bake for 30 minutes or until toothpick inserted in center comes out clean.
