Recipe Ingredients for banana bread muffins

1/2 c splenda for baking
1/4 c egg beaters
2 c flour
1/4 t. salt
1/2 c applesauce, unsweetened
3 ripe bananas, mashed
1/4 c pecans, chopped
1 t. baking soda

Recipe Directions for banana bread muffins

  1. beat sugar and egg until lemon colored

  2. add flour, salt, applesauce and bananas and stir until mixed

  3. add nuts and soda--mix lightly

  4. bake in muffin tins (either with liners of buttered lightly) at 375/30-40 min. toothpick in center will be clean when done.
