I edited a Banana Bread recipe for my oldest daughter who has Hypoglycemia.

Recipe Ingredients for Banana Bread muffins

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup Smart Balance Buttery Spread
1/2 cup honey
2 eggs
3 medium bananas
1 tsp nutmeg
1 tsp Cinnamon
1 tsp allspice
1 tsp ginger

Recipe Directions for Banana Bread muffins

  1. preheat oven to 350 degrees

  2. Mix together honey, mashed bananas, and eggs

  3. Sift together flour, baking soda, salt, nutmeg, Cinnamon, allspice, and ginger.

  4. Mix the dry ingrediants into the banana mixture.

  5. fill a muffin pan 2/3 of the way full

  6. bake 30 minutes or until a toothpick inserted into the center muffin comes out clean.
