Fluffy and dense at the same time

Recipe Ingredients for Banana Bread Muffins

1/4 c coconut oil
1/4 c honey
3 bananas
1/2 t vanilla extract
2 egg whites
1/4 c skim milk
2 oz Greek, Non-Fat, Plain Yogurt
1 t baking soda
1/4 t cinnamon
1/2 t salt
2 c whole wheat flour
5 t raw pumpkin seeds

Recipe Directions for Banana Bread Muffins

Beat oil and honey well. Add vanilla, egg whites, yogurt, milk and mashed bananas. Beat very well. Add soda, cinnamon, salt and flour. Beat until combined. Grease muffin tin and scoop into 16 wells. Top each with pumpkin seeds. Bake at 350 F for 12-15 minutes (14), turning after seven minutes. Remove from tins and let cool on rack before devouring.
