You can grind the oatmeal to make it look just like flour, but better for you. I use a food processor to grind the oatmeal.

Recipe Ingredients for Banana Bread Make Over

1/2 cup wheat flour
1 cup oatmeal
1/2 cup splenda sweetner
1 1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 egg whites
1 cup banana, mashed
1/4 cup applesauce

Recipe Directions for Banana Bread Make Over

  1. Preheat oven to 350 degrees. Grease and

  2. 8 x 4 inch loaf pan or cupcake pan.

  3. In a large bowl, stir together flour, splenda, baking powder, baking soda and cinnamon. Add egg whites, bananas, vanilla, and applesauce; stir just until combined. Pour batter into pan.

  4. Bake in preheated oven for 50-55 minutes or until a toothpick inserted into center of loaf comes out clean. Let cool before slicing. Cup cake pan will be a lot less time, around 15 to 20 minutes.
