This makes an extremely moist banada bread that freezes/thaws very well. When it has cooled enough to put in freezer I usually wrap it in wax paper and then put it in a large freezer bag. This recipe can only be doubled but no more. For best results use bananas that have been frozen and thawed.

Recipe Ingredients for Banana Bread made with Yogurt

1/4 cup margarine
1 cup sugar
2 eggs
2 bananas, mashed
1 tsp vanilla extract
1 3/4 cup Flour, all-purpose
1 1/2 tsp Baking Powder
1 tsp Baking Soda
3/4 cup Yogurt, vanilla

Recipe Directions for Banana Bread made with Yogurt

Heat oven to 350 degrees. Add first 5 ingredients and blend until well mixed. Add remaining ingredients, except yogurt. Stir until well mixed. Stir in yogurt. Spray bread pan wioth cooking spray. Pour mix into bread pan. Cook in oven for 45-55min.
