A great banana bread, and gluten free. A little crambly :-( but great with coffee.

Recipe Ingredients for Banana Bread, gluten free and dairy free

2 cups gluten free flour blend
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp nutmeg
2 eggs
1 1/2 cups banana, mashed
1 cup sugar
1 tsp vanilla
1/2 cup vegetable oil

Recipe Directions for Banana Bread, gluten free and dairy free

  1. Preheat oven to 350 degrees F.

  2. Spray bread pan with oil.

  3. Mix flour, baking powder, soda, salt, cinnamon, and nutmeg well in a large bowl.

  4. Make a well in the middle of the bowl.

  5. Beat eggs and place in well. Add banana, sugar, vanilla, and oil to the well.

  6. Mix the ingredients in the well together, then mix with everything in the bowl.

  7. Pour into pan.

  8. Bake for one hour, or until toothpick comes out clean.
