Adapted from Bakesale Betty and Bon Appetit, September 2008 by Molly Wizenberg. My only tweak on the recipe was to add the nuts. This is the best banana bread I have ever made and/or eaten. Totally worth the 327 calories for a serving.

Recipe Ingredients for Banana Bread with Cinnamon Crumble Topping

1 1/2 cups all-purpose flour
1 cup sugar
1 tsp cinnamon, ground
1 tsp baking soda
1/2 tsp salt
1 cup banana, mashed (about 3 very ripe bananas)
2 large eggs
1/2 cup canola oil
1/4 cup honey
1/4 cup water
1 cup walnuts, roughly chopped
2 T sugar
1 tsp cinnamon
2 1/2 T dark brown sugar, packed

Recipe Directions for Banana Bread with Cinnamon Crumble Topping

  1. Preheat the oven to 350 degrees.

  2. Using 3 mini loaf pans or one 9 x 5 loaf pan, spray the pan(s) lightly with cooking spray and then line with parchment paper, letting the a bit of the paper hang over the sides. This makes the loaf or loaves very easy to remove from the pan after baking. Note that an 8 1/2 by 4 1/2 loaf pan is a little too small for this recipe.

  3. In a medium bowl, whisk together the flour, sugar, cinnamon, baking soda, and salt. In a large bowl, whilk together the banana*, eggs, oil, honey**, and water.

  4. Add the dry ingredients to the wet ingredients, and stir well. Scrape the batter in prepared pan(s).

  5. In a small bowl, mix together the last three ingredients for topping. Sprinkle the mixture evenly over the batter.

  6. Bake the bread until a tester inserted

  7. *I peel any over-ripe bananas and then throw them into a freezer bag and just pull out when making banana bread. Can be thawed either in the refrigerator overnight, or in the microwave if time is short.

  8. **Use the same measuring cup for the oil and honey. Measure the oil first and it will leave a residue on the measuring cup that will make it easier to extract the honey.
