My favourite banana bread recipe, from "Cook Great Food." I don't have a bread pan anymore so I have to make it cake-shaped and it ended up as 8 triangles.

Recipe Ingredients for Banana Bread Cake, 8 Servings

1 1/4 cups flour
1 tsp baking soda
1/2 tsp baking powder
3/4 cup sugar
1 egg
1 egg white
1/4 cup plain yogurt
1/4 cup vegetable oil
1 tsp vanilla
3 bananas, mashed

Recipe Directions for Banana Bread Cake, 8 Servings

  1. Sift together flour, baking soda, and baking powder. Set aside.

  2. Blend sugar, egg, egg white, yogurt, oil, and vanilla. Blend in bananas. Add dry ingredients; mix until just combined.

  3. Pour batter into prepared pan. Bake in preheated oven (350) for an hour or until tester inserted in centre of loaf comes out clean.
