Banana bread made with half whole wheat flour.

Recipe Ingredients for Banana Bread (8/28/08)

1/2 cup crisco
1 cup sugar
2 eggs, beaten
1 1/4 cups whole wheat flour
1/4 cup oat flour
1/2 cup flour, unbleached
1 tsp. baking soda
2 tbsp. 1% milk
3 bananas, overripe and mashed

Recipe Directions for Banana Bread (8/28/08)

  1. Cream shortening and sugar.

  2. Add eggs.

  3. Add flour and baking soda.

  4. Mash bananas separately with milk.

  5. Add banana mixture to other ingredients, stir.

  6. Spoon into 4 mini loaf pans, dust with sugar, cinnamon, nutmeg, etc.

  7. Make at 350 for 40-45 minutes.

  8. One serving = two slices (eight per mini loaf).
