312 g whole wheat flour
160 g wheat bran
2 tsp baking soda
1 3/4 tsp salt
500 g banana, mashed
100 g canola oil
150 g applesauce
150 g egg whites
75 g sugar
25 g honey
150 g walnuts, lightly toasted
150 g banana, sliced

Recipe Directions for Banana Bran Walnut Muffins

  1. Preheat oven to 340 F.

  2. Sift together flour, sugar, baking soda, and salt.

  3. Whisk together mashed banana, canola oil, honey, and egg whites.

  4. Pour the liquid ingredients into the dry ingredients and stir gently with a spatula to combine.

  5. Fold in the toasted and chopped walnuts and sliced bananas.
