Bran muffins with a boost of natural sweetness from bananas.

Recipe Ingredients for Banana Bran Muffins

3 cups All Bran cereal
1 cup boiling water
1/2 cup sugar
2 bananas, mashed
1/2 cup canola oil
2 eggs
2 1/2 tsp. baking soda
1 cup all-purpose flour
1 1/2 cups whole wheat pastry flour
1/2 tsp. cinnamon
2 cups buttermilk

Recipe Directions for Banana Bran Muffins

  1. Combine bran cereal and boiling water and set aside.

  2. Cream together sugar, bananas, canola oil and eggs in large mixing bowl.

  3. In separate bowl, combine soda, flour, pastry flour and cinnamon.

  4. Add dry ingredients alternately with buttermilk to the creamed mixture.

  5. Finally, stir in the bran mixture, stirring only until combined.

  6. Bake at 375F for 15-18 minutes.

  7. Store leftover batter in refrigerator. Do not stir! Just scoop into muffin tin and bake any amount for a nutritious treat or healthy breakfast!
