lower fat and calorie with no choc chips or pecans but not as yummy. maybe add an extra 1/2 c mashed bananas.

Recipe Ingredients for banana bran muffins

2 1/2 c whole wheat flour
3/4 c brown sugar
1 1/2 tsp baking soda
1/4 tsp salt
2 large eggs
1 1/2 c 1% milk (soured)
1 1/2 c all bran buds
1 c mashed bananas
1 c chocolate chips
1 c chopped pecans

Recipe Directions for banana bran muffins

  1. preheat oven to 350 F

  2. coat 2 muffin tins with paper or nonstick spray

  3. mix flour, sugar, soda and salt

  4. in another bowl mix milk, eggs and bran and let stand for 10 min.

  5. mix wet and dry until just moistened.

  6. fold in mashed bananas, chocolate chips and nuts.

  7. fill 24 muffin cups equally.

  8. bake 20-25 min, until toothpick inserted into muffin comes out clean.
