Banana Bran Muffins Recipe

A not-too-sweet muffin just right for breakfast or dessert. The bran adds fiber and makes these filling, and the chocolate chips add an extra touch of sweetness. Adapted from The Joy of Cooking, 2006 ed.

Recipe Ingredients for Banana Bran Muffins

1 1/2 cups all-purpose flour
1/2 cup wheat bran
1/2 tsp baking soda
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
1/3 cup walnuts, coarsely chopped
1/3 cup chocolate chips
3/4 cup brown sugar
1/3 cup canola oil
1 large egg, beaten
1 1/3 cup banana, mashed
1 tsp vanilla

Recipe Directions for Banana Bran Muffins

  1. Preheat oven to 375. Grease your muffin pans - recipe makes 12 standard muffins.

  2. Whisk together the dry ingredients.

  3. Add the walnuts and chocolate chips to the dry mixture.

  4. Whisk together the brown sugar and liquid ingredients.

  5. Fold the dry ingredients into the banana mixture until just moistened - do not overmix. Batter should not be smooth.

  6. Bake 14-17 minutes, or until a toothpick inserted into the muffins comes out clean. Allow to cool in pan for 2 minutes. Best eaten warm.
