Recipe Ingredients for Banana Bran Muffins

1 cup bran flakes
1 cup banana, mashed
0.66 cup 1% milk
1/4 cup packed brown sugar
1/4 cup unsweetened applesauce
1 egg
3/4 cup whole wheat flour
3/4 cup unbleached flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt

Recipe Directions for Banana Bran Muffins

  1. In large bowl combine bran, bananas & milk. Stir well and let stand 5 minutes. Add brown sugar, egg, applesauce and mix well.

  2. Combine flour, baking powder, cinnamon & salt. Stir into bran mixture until moistened. Spoon into greased cupcake papers (muffin pan) 1/2 full.

  3. Bake 375 degrees for 20 - 25 minutes.
