Recipe Ingredients for Banana Bran Muffins

1 large banana
1 3/4 cup white flour
1/4 cup bran flakes
1/4 cup flaxseed meal
1 tsp salt
2 tsp baking soda
1/4 cup canola oil
1/2 cup egg beaters
1/8 cup 1% milk
1/4 cup dark brown sugar
1/4 cup walnuts

Recipe Directions for Banana Bran Muffins

  1. Mash banana and set aside

  2. Mix dry ingredients and set aside (flour, bran, flaxseed, salt, and baking soda)

  3. Beat together egg beaters, oil, dark brown sugar, and milk

  4. Mix banana into liquid mixture

  5. Add all liquid ingredients into dry ingredients

  6. Fold together and add in walnuts

  7. Add equal amounts of batter to muffin tin

  8. Bake at 400 degrees for 20 minutes or until lightly browned on top
