Recipe Ingredients for Banana Bran Muffins

1 cup banana, mashed
1 cup all bran
1/4 cup skim milk
1/2 teaspoon vinegar
2 egg whites
2 tablespoons canola oil
2 teaspoons molasses
1 teaspoon vanilla
1 cup flour
1/4 cup Splenda granular
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cream of tartar

Recipe Directions for Banana Bran Muffins

  1. Preheat oven to 400F. Spray standard 12-cup muffin tin with nonstick cooking spray.

  2. In a small dish mix milk and vinegar together.

  3. In a medium bowl stir together the first 7 ingredients (banana through vanilla). Add milk/vinegar mixture. Set aside for at least 5 minutes to soften bran.

  4. In a large bowl, combine flour, Splenda, baking soda, baking powder and cream of tartar. Stir; make a well in the center and add the banana mixture. Using a large spoon or spatula, stir just until dry ingredients are moistened.

  5. Spoon batter into prepared muffin tins.

  6. Bake for 15 minutes or until center springs back when lightly touched. Cool for 5 minutes before removing to wire rack.
