Moist and tasty breakfast muffins

Recipe Ingredients for Banana Bran Muffins

1 1/2 cups unbleached flour
1/2 cup whole wheat flour
5 tsp baking powder
1 1/2 cups wheat bran
1/2 cup wheat germ
1/2 tbsp cinnamon
1 tsp salt
200 grams egg substitute
2/3 cup sunflower oil
2 cups bananas, mashed
1/2 cup maple syrup
1/2 cup raisins
1/2 cup sunflower seeds

Recipe Directions for Banana Bran Muffins

  1. Preheat oven to 350 degrees.

  2. Spray 12-cup muffin tin with low calorie spray.

  3. Combine first seven (dry) ingredients in a bowl.

  4. In a separate bowl, mix wet ingredients till uniform.

  5. Add wet mix to dry mix, stirring until moistened.

  6. Spoon batter into muffin tins.

  7. Bake for 20 minutes.

  8. Remove from pan, and let cool.
