Recipe Ingredients for Banana and Bran Muffins

1/2 cup Chopped Walnuts
1/4 tsp Salt, Table
1 tsp Baking Powder
1 tsp Baking Soda
1 cup Complete Wheat Flakes Cereal
1/2 cup Gold Medal All Purpose Flour
1 cup Gold Medal Whole Wheat Flour
2 large Egg, Whole
1 tsp Vanilla Extract
1/4 serving Soy Milk
3 medium (7" to 7-7/8" long) Bananas
1/4 cup, packed Sugars, Brown
1/4 cup Apple Sauce Unsweetened Organics
1 tbsp Cinnamon, Ground

Recipe Directions for Banana and Bran Muffins

  1. Preheat oven to 375 degrees.

  2. In a small bowl, mash the bananas.

  3. In a large bowl, mix the applesauce and brown sugar until combined.

  4. Add all wet ingredients, including mashed bananas and mix well.

  5. Add all dry ingredients and mix well. Batter may look slightly dry, but it is ok. Let batter sit for a few minutes so the bran flakes get a little mushy.

  6. Scoop batter using 1/4 cup into greased mini bundt tin.

  7. Bake for approx.15- 20 minutes
