Recipe Ingredients for Banana Bran Muffins (adapted from Canadian Living)

1 large egg
1 cup mashed bananas
2/3 cup buttermilk
2/3 cup brown sugar
1 tbsp honey
1/3 cup canola oil
1 tsp vanilla
1 cup wheat bran
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1/4 cup ground flaxseed
2 tsp baking soda
1 tsp cinnamon
1 tsp salt
3/4 cup chopped dates

Recipe Directions for Banana Bran Muffins (adapted from Canadian Living)

  1. Combine first 6 ingredients, and mix well.

  2. Blend dry ingredients, and add to above mixture. Stir in dates.

  3. Divide evenly into 12 cup muffin tin.

  4. Bake for 20 min at 375 degrees F.
