Tasty, healthy and filling low calorie muffins. Note* Egg must be whisked and the flour sifted. You can also replace the nuts with ur favorite kind or eliminate them all together if you want an even lower calorie count

Recipe Ingredients for Banana Bran Muffin (low cal, high fiber)

1 cup All-Purpose Flour
9 tsp unpacked Sugars, Brown
2 1/2 teaspoon Baking Powder
1/2 tsp Salt, Table
1 cup Wheat Bran, Crude
1 large Egg, Whole
1 cup, mashed Bananas
2 fl oz Milk
1 tsp Cinnamon, Ground
1 tbsp Olive Oil
1/2 oz (14 halves) Walnuts, English

Recipe Directions for Banana Bran Muffin (low cal, high fiber)

  1. ?Mix the eggs, Banana, Oil, Milk in a Bowl.

  2. ?Mix all the other dry ingredients together.

  3. ?Fold the wet and dry ingredients. Mix gently and it does not matter if a few lumps remain.

  4. ?Put batter in greased muffin trays.

  5. ?Fill each cup only up to 3/4 the level, as the batter will rise.

  6. ?Put in pre-heated oven at 250 Degree C and bake for 25 to 30 Minutes, or until golden brown from top.

  7. ?Do the skewer test before removing from the oven.

  8. ?Serve hot. Goes very well with honey as an accompaniment for kids.
