This bread is great the day after baking. Wrap in foil when you take from the oven & place in fridge for 24 hours. MMM MMM Moist!

Recipe Ingredients for Banana Bran Bread

1 cup whole wheat flour
1/2 cup bran, oat
2 teaspoons Baking Powder
1/4 teaspoon cinnamon
1/8 teaspoon ginger
1/16 teaspoon cloves
1/16 teaspoon nutmeg
1/4 teaspoon Baking Soda
1/4 teaspoon salt
1 cup mashed banana
3/4 cup brown sugar substitute
1/4 cup milk, 1 percent
2 eggs
2 tablespoon canola oil
1/4 cup walnuts

Recipe Directions for Banana Bran Bread

  1. Preheat oven to 350

  2. Lightly coat bottom of loaf pan

  3. Set aside

  4. In a large bowl, stir together whole wheat flour, oat bran, baking powder, spices, baking soda & salt.

  5. Make a well in the center of the flour mixture, set aside

  6. In a medium bowl combine mashed banana, brown sugar substitute, milk, eggs & oil.

  7. Add banana mixture all at once to flour mixture

  8. Stir just until moistened (batter should be lumpy)

  9. If desired, fold in 2 tablespoons of walnuts

  10. Spoon patter into prepared loaf pan

  11. If desired sprinkle remaining walnuts on top

  12. Bake for 45 to 50 minutes or until toothpick inserted near center comes out clean

  13. Cool in pan on wire rack for 10 minutes

  14. Remove bread from pan

  15. Cool on wire rack

  16. Wrap & store overnight before slicing
