Banana, Blueberry, Oat and Barley Flour Bread w/sugar.

Recipe Ingredients for Banana, Blueberry, Oat Bread

2 cups barley flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
2 large eggs, beaten
4 small bananas, mashed
1/4 cup frozen blueberries
2 tbs sugar
2 tbs honey
1/4 cup rolled oats
1/2 cup extra virgin olive oil

Recipe Directions for Banana, Blueberry, Oat Bread

  1. Set oven to 350. Mix all dry ingredients in a medium bowl. Beat the eggs in a small bowl and mash the bananas in another bowl. Add the wet ingredients to the dry in the medium bowl, mix well, then pour into a prepared bread pan/baking pan or muffin tin. Bake for 55 minutes to 1 hour for the bread, 25-35 for the muffins. Cool for 30 minutes or enjoy warm :)
