A great whole grain and fruit muffin.

Recipe Ingredients for Banana Blueberry Muffins

1 medium (7" to 7-7/8" long) Bananas
1/2 cup Apple Sauce Unsweetened Organics
4 large Egg, White
1/2 cup(123 g) Apple Sauce Unsweetened Organics
0.13 cup, chopped Pecans
1 cup Blueberries
1.5 cup White Whole Wheat Flour
1 tsp Baking Powder
2 serving coconut nectar sweetener

Recipe Directions for Banana Blueberry Muffins

  1. Preheat oven to 350 degrees. Beat egg whites with apple sauce, banana, coconut nectar, vanilla and cinnamon.

  2. Add flour and baking powder a little at a time with mixer on low speed until well combined.

  3. Fold in pecans and blueberries.

  4. Spray muffin tin with non-stick spray. Fill muffin cups to rim. Bake at 350 degrees for 30 minutes.
