Low-fat, low sugar breakfast muffin

Recipe Ingredients for Banana and Blueberry Muffins

150 g self-raising flour
150 g wholewheat flour
2 tsp bicarbonate of soda
1 tsp baking powder
50 g porridge oats
2 medium bananas, mashed
280 ml semi skimmed milk
1 tsp lemon juice
2 large whole eggs
150 g blueberries
8 tbsp splenda no calorie

Recipe Directions for Banana and Blueberry Muffins

  1. Preheat oven to 180oC / 160oC fan

  2. Line a 12-hole muffin tin with paper muffin cases

  3. Mix the flour, bicarbonate of soda, baking powder, oats and splenda together.

  4. In a separate bowl mix the mashed banana, eggs, milk and lemon juice and add to the dry ingredients and stir quickly (batter will be lumpy and some dry flour may remain)

  5. Add blueberries and stir once more.

  6. Divide mixture between the cases (will be full)

  7. Bake for 18-20 mins
