A little dense, but good! Good for vegans, I think, as it uses no butter or eggs.

Recipe Ingredients for Banana Blueberry Bread

1 1/2 cups whole wheat flour
1/2 cups rolled oats
2/3 cup sugar
1 tsp baking soda
1/2 tsp salt
1/4 cup oil
1/4 cup prunes, pureed with water
1 1/2 cup bananas, mashed
3/4 cup blueberries
1/4 cup walnuts, minced

Recipe Directions for Banana Blueberry Bread

  1. Preheat oven to 350 degrees.

  2. Grease a bread pan.

  3. Mix together dry ingredients (flour, oats, sugar, baking soda, salt, walnuts).

  4. In larger bowl, mix bananas, prune puree and oil.

  5. Stir dry ingredients into the wet ones.

  6. Gently fold in blueberries.

  7. Pour into pan.

  8. Bake until a fork/knife comes out clean and the outside is nicely browned (approx. 20-25 minutes)
