A tasty banana bread with blueberries.

Recipe Ingredients for Banana-blueberry Bread

1 1/2 cups banana, mashed
3/4 cup blueberries
2/3 cup light brown sugar
1/4 cup canola oil
1 large egg white
1 large egg
1 3/4 cup whole wheat flour
1 1/4 tsp cream of tartar
3/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt

Recipe Directions for Banana-blueberry Bread

  1. Preheat the oven to 350 degrees F.

  2. Combine banana, brown sugar, oil and eggs in a large bowl and mix until smooth.

  3. Combine flour, cream of tartar, baking soda, cinnamon, nutmeg and salt in another bowl and mix thoroughly.

  4. Add flour mixture to banana mixture, stirring until moist. Add blueberries.

  5. Spoon mixture into an 8 x 4 loaf pan, that has been prepped with nonstick cooking spray.

  6. Bake at 350 degrees for 40 minutes or until toothpick inserted comes out clean.

  7. Cool for 15 minutes before removing from the pan, then cool completely on rack.
