A low-fat, fairly healthy treat. A great way to deal with overripe bananas.

Recipe Ingredients for Banana-Blueberry-Bran Bread or Muffins

1/3 cup honey
1/4 cup applesauce
2 eggs
3 ripe bananas
1/4 cup soy milk
1 2/3 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 1/2 cups blueberries
4 tablespoons wheat germ

Recipe Directions for Banana-Blueberry-Bran Bread or Muffins

  1. Preheat oven to 350 F.

  2. Liberally grease and flour 12-muffin tin.

  3. Mash bananas in bowl large enough to hold all ingredients and mix in remaining wet ingredients and blueberries. Assemble dry ingredients in a separate bowl.

  4. Add dry ingredients to wet and mix just enough to moisten mixture through.

  5. Add batter to cups of muffin, just to the top.

  6. Bake for 25 minutes or until muffins are firm to the touch and a toothpick comes out cleanly. Allow to cool in tin for 15 minutes or until able to remove cleanly. Muffins will stick to the tin, so remove with care (gentle work with a spoon may help on the tougher ones).

  7. You can do this as a loaf bread, but bake for about 60 minutes.

  8. A nice way to add more depth is to add 1/2 teaspoon vanilla extract and/or 1/2 teaspoon almond extract to the wet ingredients.
