Banana & Berry Creme Brulee Recipe

Custard based brulee; requires 1 hour cooking and being left to cool.

Recipe Ingredients for Banana & berry creme brulee

125 ml milk (skimmed)
1 egg yolk
1 tbsp demerara sugar
1 banana (sliced thinly)
1 tbsp sugar (half spoon if possible)
1/2 cup raspberries

Recipe Directions for Banana & berry creme brulee

  1. Preheat an oven to 140oC

  2. Heat the milk to almost boiling, then remove from heat

  3. Beat the egg yolk and sugar (I used half spoon) until thick

  4. Slowly add the hot milk in small amounts to the egg mixture to make the custard

  5. Place the banana and raspberries into ramekin

  6. Top the fruit with the custard mixture

  7. Place the ramekin dishes in a roasting tin and pour boling water into the tin, so it comes half way up the ramekin dish (keeps custard soft and stops it from burning)

  8. Bake for an hour

  9. Take out the oven to cool, once cool chill in fridge until required.

  10. Just before serving place the grill on a high heat (if the grill isn't hot enough it will take to long to melt the sugar and will heat the custard)

  11. Once the grill is heated, sprinkle the demerara sugar on top of the chilled dishes and grill for 2-3 minutes to melt the sugar without heating the custard.
