Recipe Ingredients for Banana berry coconut muffins for vegans

1/4 c dried cranberries
1/2 c whole wheat flour
1 c flour
1 c rolled oats
1/2 c brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 c shredded coconut
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ground cloves
1/4 c oil
2 tbsp oil
3/4 c soymilk
1 tsp vanilla
2 large bananas, mashed
1/2 c walnuts, chopped

Recipe Directions for Banana berry coconut muffins for vegans

  1. Preheat oven to 400.

  2. Boil 1 c water and soak cranberries while you do everything else.

  3. Mix all dry ingredients together.

  4. Mash up the bananas really well, mix with the oil, soymilk, and vanilla.

  5. Pour liquids into dry bowl. Mix until just combined.

  6. Drain berries, add to batter, toss in walnuts. Mix gently, again until just combined.

  7. Pour into muffin tins and bake about 18-20 minutes.
