Recipe Ingredients for Banana-Berry Bread

2 c. whole-wheat pastry flour
1/4 c. ground flaxseed
2 tsp. baking powder
1/2 tsp. baking soda
4 bananas, mashed
1/3 c. honey
1/4 c. skim milk
1 egg white
1 tsp. vanilla
1 c. strawberries, or mixed berries

Recipe Directions for Banana-Berry Bread

  1. Preheat oven to 350*F. Grease and flour a loaf pan.

  2. In a medium mixing bowl, combine first four ingredients (flour through soda). Set aside. In a large mixing bowl, combine mashed bananas, honey, milk, egg, and vanilla. Add dry ingredients, gently fold in berries. Do not overmix.

  3. Pour into prepared bread pan. Bake for 50-60 minutes until toothpick comes out clean, cool 10 minutes in pan before removing and slicing.
