Adapted from a Betty Crocker Cookbook for a low sodium, no cholesterol, low fat alternative. Can be served plain or iced with cream cheese frosting.

Recipe Ingredients for Banana Bars

1/2 c smart balance butter
1 c sugar
1/3 c. In the Raw Zero Calorie Sweetener
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 c Eggbeaters
1 c bananas (ripe and mashed)
4 oz Greek Yogurt
1 tsp vanilla
1 c. White Flour, Unbleached
1 c whole wheat flour
1 c Walnuts

Recipe Directions for Banana Bars

  1. Beat softened butter at medium speed for 30 seconds.

  2. Add sugar, baking powder, and baking soda.

  3. Beat until combined, scraping side of bowl occasionally.

  4. Beat in eggbeaters, bananas, yogurt, and vanilla until combined.

  5. Beat or stir in flour.

  6. Stir in nuts.

  7. Pour batter into 2 lightly sprayed 15x10x1 inch pans and spread evenly.

  8. Bake at 350 F for about 25 minutes or till a wooden toothpick comes out clean from the center of the pan.
