Recipe Ingredients for Banana Applesauce Muffins

4 medium (7" to 7-7/8" long) Bananas
1 cup Sugars, Granulated
1 large Egg, Whole
0.25 cup Vegetable Oil, Canola
1/2 cup Applesauce - Unsweetened
2 cup Flour, All Purpose
3 tsp Baking Soda
2.5 oz Light 'n Fit Nonfat Lemon Chiffon Yogurt
2 tsp Vanilla Extract

Recipe Directions for Banana Applesauce Muffins

  1. Preheat oven to 300 degrees.

  2. In a large mixing bowl, mix the banana, sugar, egg, oil, and applesauce. Add the flour and baking soda, and mix until just blended; add the yogurt and vanilla and blend again; do not overmix.

  3. Lightly spray or wipe the muffin tin with vegetable oil, or use mini muffin cups in a mini-muffin tin; fill cups 2/3 full.

  4. Bake for 25-30 minutes, or until a toothpick comes out clean.
