Banana Almond Muffins Recipe

This was an attempt at creating a healthy muffin. I substituted 3/4 old fashioned oats for 1/2c. of flour. I thought I had low fat plain yogurt but only whole milk yogurt. I substituted the yogurt for butter. Also added honey instead of more brown sugar. I thought the muffins turned out good and wholesome. Next time I hope to decrease the butter even more and substitute low fat yogurt. Also maybe some almond butter instead of an entire 1/3c. of honey.

Recipe Ingredients for Banana Almond Muffins

0.75 cup dry Old Fashioned Quaker Oats
1 cup(30 g) Gold Medal Unbleached All Purpose Flour
0.33 cup Organic Plain Yogurt
0.5 cup, sliced Almonds
0.5 cup, packed Sugars, Brown
2 large Egg, Whole
1 tsp Vanilla Extract
0.33 cup(339 g) Honey, Strained Or Extracted
1.5 tsp Baking Soda
4 large (8" to 8-7/8" long) Bananas

Recipe Directions for Banana Almond Muffins

Mix together dry ingredients. Using handheld mixer, mix sugar and honey with mashed bananas. Mix eggs with vanilla extract. Add all ingredients together. Place batter in regular sized muffin pan and cook at 375 degrees for 16-18 minutes.
