Delicious and moist muffins that make for a great breakfast on the run, a handy lunch box filler or a tasty snack anytime.

Recipe Ingredients for Banana and almond meal muffins

125 g butter
2 eggs
2 bananas
1/4 tsp vanilla essence
1 cup self-raising flour
1 cup almond meal
3/4 cup sugar
1/2 tsp baking powder
1 tbsp cinnamon

Recipe Directions for Banana and almond meal muffins

  1. Preheat the oven. 165C fan-forced

  2. In a large jug in the microwave, melt the butter then allow to cool.

  3. Beat the eggs and add them gradually to the cooled butter, along with the mashed bananas and vanilla.

  4. In a bowl mix the flour, almond meal, sugar, cinnamon and baking powder.

  5. Add the liquid ingredients to the dry ingredients and mix well till a thoroughly mixed but lumpy batter forms.

  6. Pour batter into 2 greased 12 hole muffin tins, or into patty papers inside the muffin holes (makes clean up easier and quicker).

  7. Bake for 20-30 minutes until a skewer inserted into the centre comes out clean.

  8. Turn out onto a rack and allow to cool.
