gluten free banana almond meal muffins (no added sugar, no dairy) could easily be made vegan by using flax eggs (mix ground flax meal with warm water and allow to sit for 10 min) Optional add ins: Walnuts (or other chopped nuts) Dried fruit (ex. raisins, cranberries) Chopped apple, frozen or fresh berries (may need to increase baking time) Chocolate chips

Recipe Ingredients for banana almond meal muffins (gluten free, sugar free, dairy free)

8 serving Almond Flour
3 medium (7" to 7-7/8" long) Bananas
3 large Egg, White
1/2 cup Applesauce
1 tbsp Olive Oil
1/2 cup dry Old Fashioned Oats
8 prunes Prunes, Dried, Uncooked
1 3/4 tbsp, ground Flaxseed
1 tbsp Vanilla Extract
2 tsp Cinnamon, Ground
1/2 tsp Ginger, Ground
1/2 tsp Baking Soda
1 teaspoon Baking Powder

Recipe Directions for banana almond meal muffins (gluten free, sugar free, dairy free)

  1. In a blender or food processer, puree bananas, applesauce and dried fruit. Add eggs, oil and vanilla and blend again. Pour wet ingredients into a mixing bowl.

  2. In a separate bowl, whisk together dry ingredients. Fold dry ingredients into wet, then fold in mix ins of choice**.

  3. Use ice cream scoop to divide batter among muffin tins. Bake for 20-25 minutes at 350F, or until tops are lightly brown and toothpick comes out clean. Makes approximately 16-18 muffins.
