Recipe Ingredients for Banana Almond Butter Cookies

3/4 cup white whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp pumpkin spice
1 banana, really ripe
1 tbsp canola oil
1 tbsp flax seed meal
3 tbsp water
1/4 cup honey (or agave nectar)
1/2 cup light brown sugar
1/2 cup almond butter
2 cups rolled oats

Recipe Directions for Banana Almond Butter Cookies

  1. Preheat the oven to 350˚F.

  2. Combine first 6 dry ingredients in a bowl and mix well by hand.

  3. With a hand mixer, blend the banana until smooth.

  4. Add the oil, flax, water, honey, and sugar to the mixture and blend.

  5. Add the almond butter to the mixture and blend on low.

  6. Gradually add the dry ingredients to the wet mixture and blend until well combined.

  7. Add the oats to the mixture and mix by hand until they are pretty uniform throughout.

  8. Drop cookies by 1/2 tablespoons onto a greased cookie sheet (spray the cookie sheet with cooking spray before hand)

  9. Bake in the oven for 10-12 minutes, or until the edges are slightly brown.
