Muffins made with whole grain brown rice flour.

Recipe Ingredients for Ban-Cran-Rice Muffin - wheat-free.

1 1/2 cup brown rice flour
3/4 cup brown sugar
1 cup skim milk
1/2 tsp baking powder
1 1/2 bananas, ripe
1/2 cup cranberries
2 tbsp olive oil
1/2 banana, sliced into 12 thin pieces

Recipe Directions for Ban-Cran-Rice Muffin - wheat-free.

  1. Combine in a mixing bowl:

  2. rice flour

  3. brown sugar

  4. skim milk

  5. 1 tbsp olive oil

  6. baking powder

  7. 1.5 bananas

  8. Mix well until muffin batter is formed. Add cranberries, stir well.

  9. Use 1 tbsp of olive oil to grease the muffin baking tray. Pour batter into the baking tray. Place a slice of banana on top of each muffin. Bake until ready (I baked 45 minutes at 350 C).
