Recipe Ingredients for Balsomic Eggplant with Brown Rice

0.5 medium unpeeled raw Eggplant
1 medium (2-1/2" dia) Onions
3 medium White Button Mushrooms Packaged
1/4 tsp Sea Salt
1 tbsp Extra Virgin Olive Oil
3 tbsp Balsamic Vinegar, Organic
1 cup Rice, Brown, Medium-grain, Cooked
1 oz Organic Baby Spinach

Recipe Directions for Balsomic Eggplant with Brown Rice

cut up veggies put in to a roast pan sprinkle with salt than evoo. roast at 350 for 20 min then flip over. cook for another 15 min then pull out and add balsamic cook for 5 more min. while veg is cooking make brown rice. serve over fresh spinach heat will wilt.
