Chicken cutlets in a balsamic reduction sauce

Recipe Ingredients for Balsamico Pollo

1 1/2 lb boneless chicken
2 tbl olive oil
1/4 tsp pepper
1/4 tsp salt
3 large onions, sliced
1/2 cup chicken broth
2 tbs balsamic vinegar

Recipe Directions for Balsamico Pollo

  1. Heat olive oil in large frying pan. Season chicken with salt & pepper, then lightly brown on both sides.

  2. Add chicken broth and let simmer for 5 minutes or so. Add onion over top of chicken, cover and let simmer another few minutes.

  3. As onions become tender, take lid off and stir. Don't let the pan get dry, add a little more broth if necessary. Add the balsamic vinegar, sprinkling over entire pan. Stir and let simmer for 2 minutes. Turn stove down to lowest setting and let sit for a few minutes.
