Balsamic Zucchini Recipe

Recipe Ingredients for Balsamic Zucchini

4 c zucchini, sliced
1/4 c olive oil
3/4 tsp salt
1/2 tsp black pepper
1/4 c balsamic vinegar
1/2 c parmesan cheese, grated
1/3 c pine nuts

Recipe Directions for Balsamic Zucchini

  1. Toss zucchini with oil, salt & pepper in large bowl.

  2. Arrange zucchini in 1 layer in 2 shallow baking pans (1 inch deep).

  3. Broil 1 pan of zucchini 3 to 5 in from heat, without turning, until browned in spots and beginning to sofften (4-6 min).

  4. Drizzle 2 tbsp vinegar over broiled zucchini and shake pan a few times, then continue to broil until most of vinegar has evaporated (2 min).

  5. Sprinkle 1/4 c cheese over broiled zucchini and broil until cheese is melted, about 1 minute more.

  6. Cook remaining pan of zucchini in same manner.

  7. Cool to room temp & serve sprinkled with pine nuts.
