Sauteed shrimp in a tasty balsamic vinegar/dijon mustard reduction sauce

Recipe Ingredients for Balsamic shrimp

1 tbsp olive oil
1 tbsp butter
113 g crimini mushrooms chopped
1/2 cup finely chopped onion
2 cloves garlic, minced
240 g shrimp
3 tbsp balsamic vinegar
1 tbsp Dijon mustard
1/4 cup chopped fresh basil
411 g Hunts petite diced tomatoes (use full can (411g), after cooking down the liquids, you will be left with much less

Recipe Directions for Balsamic shrimp

  1. Saute onions/shallots in OO until very soft and translucent

  2. Add garlic reduce heat to low and saute for about 3-5 mins

  3. add mushrooms and butter -- saute until mushrooms are very soft

  4. remove from pan

  5. Add shrimp (toss with salt and pepper first), saute for about 1 min.

  6. Add balsamic/mustard mixture, saute for about 1 min

  7. Add veggies back, toss in tomatoes and heat through -- DO NOT let shrimp over cook
