A different take on the traditional baked yam- balsamic vinegar and molasses enhance the natural sweetness without adding excess sugar.

Recipe Ingredients for Balsamic Roasted Yams

2 1/2 lbs Yams or Sweet Potatoes
1 tbsp olive oil
1 tbsp Balsamic Vinegar
1 tbsp molasses
1 pinch salt

Recipe Directions for Balsamic Roasted Yams

  1. Preheat oven to 375ºF

  2. Peel yams, cut into large chunks. Place in a large glass baking dish or casserole.

  3. Mix olive oil and vinegar together with a whisk. Pour over yams and toss to coat evenly. Sprinkle with salt.

  4. Cover with foil and bake for 40 minutes. Yams should be fork tender.

  5. Remove foil, turn pieces over and and bake an additional 20 minutes until yams are golden on edges.

  6. Remove from oven, recover and allow to sit for 5 minutes before serving.
